Banana Biscotti Empty Banana Biscotti

Banana Biscotti

5 cups Flour
1/4 cup Chopped Peanuts
1/2 teaspoon Baking Soda
1 Egg
1/4 cup Vegetable Oil
1 1/2 cups Banana (pureed)
2 teaspoons Vanilla


Place dry ingredients in a large bowl and mix well. Blend egg, oil, banana and vanilla together. Make a well in the dry ingredients and pour in banana mixture. Mix thoroughly adding small amounts of water if necessary. Knead for a few minutes on a floured surface and form dough into log shapes approximately 2 inches high. Flatten logs to 1 inch high and place on lightly greased cookie sheets. Bake in preheated oven at 325F for 30 40 minutes.

Remove biscotti from the oven and let cool for 10 minutes. Slice into 1/2 inch pieces and put back in the oven for 20 minutes or until gold brown. Cool and serve.
